Specialising in organic cakes using natural ingredients, I also specialise in gluten free cakes. Don't worry if you're not gluten free as I love to use wholesome spelt or other whoelgrain flours!
Many of the cakes have added veg appeal (though no-one else has to know!). Adding vegetables to many of the cakes gives them different characteristics as well as increasing the goodness factor. Using less refined sugar or mineral-rich maple syrup means that there is even more natural goodness baked in!
I love playing with flavours and working out how to make the classical surgery recipes more wholesome (leaving all the yumminess in!). There are so many options to explore. Some classics are:
- Lemon and courgette
- Chocolate beetroot
- Orange and almond
- Chocolate quinoa
- Red (beetroot) velvet
- Matcha tea and vanilla
- Classic vanilla sponge with various fillings
